This is the holiday cookie of holiday cookies! These buttery fingers are dipped in chocolate, then rolled in chopped pistachios for a spectacular look and a taste that is absolutely amazing! Why do we wait for the holidays to make the best recipes? This little cookie is so easy to make and looks spectacular on a holiday buffet or in a cookie tin for your friends and neighbors.
Using only four ingredients, you can whip these up in no time. If you don’t have pistachios, use crushed up candy canes (make sure they are finely crushed) or use another type of nut. You can’t ever go wrong with this recipe.
Butter Cookie Recipe
Ingredients for Butter Cookies:
- 1 cup butter, softened
- ½ cup powdered sugar
- 1 tsp. vanilla
- 2 cups flour
- 2 cups milk chocolate chips
- 3/4 cup pistachios, crushed
Directions for making Butter Cookies:
Preheat the oven to 350 degrees. Do not grease your cookie sheets!
In a medium-sized mixing bowl, whip together the softened butter, powdered sugar, vanilla, and flour. Shape the dough into 2-inch long “fingers” and place them on the ungreased cookie sheet.
Bake at 350 degrees for about 12 minutes or until they are slightly set – do not brown!
Let the cookies set on the baking sheet for about 5 minutes before removing them to a wire rack to finish cooling.
Melt the chocolate chips by putting them in a glass bowl in the microwave for 1 minute. Stir until the chocolate is smooth.
Dip one end of the cooled cookies into the chocolate and press it lightly into the crushed pistachios. Set on parchment paper or wax paper until the chocolate is set. (Store at room temperature in an airtight container with wax paper or parchment paper between the layers of cookies.)
