If you’ve never had a breakfast burrito, you are in for a treat! They are super addicting because they taste so darn good! This isn’t a bad thing -- a breakfast burrito can be a healthy choice. Here is a recipe that combines protein, potassium, fiber, and a score of other nutrients, all in a delicious and easy dish. It is a perfect breakfast choice that will satisfy your hunger, and leave you wanting one the next day – a healthy addiction!

What you put in a burrito makes them wonderful. What you put on top of the burrito, makes them amazing! These burritos taste wonderfully accompanied with sour cream (fat-free sour cream works well) and salsa. Whatever your favorite salsa is, this is the place for it.

Breakfast Burrito Recipe

Ingredients for Breakfast Burritos (makes 2 burritos):

  • Olive oil
  • 2 medium potatoes, sliced
  • ½ red bell pepper, chopped
  • ½ cup corn
  • 2 eggs
  • Salt/pepper to taste
  • Fresh cilantro, chopped
  • 2 large tortillas
  • Sour cream (garnish)
  • Salsa (garnish)
  • Cheese, shredded (optional garnish)

Directions for making Breakfast Burritos:

In a large skillet, put in enough olive oil to lightly coat the bottom, add the sliced potatoes and red bell pepper. Cook, flipping occasionally, until the potatoes are soft and a bit crispy. Add the corn and cook for a couple minutes more.

Break the eggs onto the potatoes, add salt and pepper, then mix everything together. Cook until the eggs are done – remove from the heat. Put the tortillas on top of the mixture, and cover the pan for 2-3 minutes to heat the tortillas. Put a tortilla on a plate, put ½ the mixture in the center of the tortilla, sprinkle on some fresh cilantro, and fold the tortilla around the mixture. Eat warm accompanied with sour cream and salsa.
