Burgers that really aren't burgers

As we put the holidays behind us and get back into our regular routines, we also do that with our eating habits. It's always fun to splurge and have those special foods that we only enjoy once or twice a year. Like many people, fun as it is to have those kinds of treats, we reach a point when we want something good and basic to eat.

The recipe I have for you today is for a special kind of burger. We're not talking about using ground beef, but instead, we're using tuna! This recipe, "Tuna Burgers", is a tasty and healthy sandwich to have for lunch or dinner as we get our taste buds back into a more normal pattern!

You may have made a new year's resolution to eat healthier and cut back on red meat. If so, this is a recipe you can begin with. This recipe uses a can of tuna with other ingredients added for flavor. This recipe makes four burgers, so if you have more people to serve, it can certainly be doubled to make eight. This recipe is one that you won't have to feel guilty about eating, since fish such as tuna and salmon, are healthy, especially when it comes to heart health. Serve these burgers with some oven-baked French-fried potatoes, a good dish of coleslaw, along with a beverage and a good dessert, and the meal is complete.

TUNA BURGERS

  • 1 can (7 oz.) tuna, drained and flaked (I prefer the water-packed)
  • 1/2 cup salad dressing, such as Miracle Whip
  • 1/2 cup dry bread crumbs
  • 1 egg, beaten
  • 2 tablespoons finely-chopped onion
  • 1/2 teaspoon salt
  • dash of pepper
  • about 1-2 tablespoons butter
  • 4 hamburger buns, split
  • lettuce, tomato and other condiments according to personal taste

Combine the tuna, salad dressing, bread crumbs, egg, onion and seasonings, mixing well. Shape into four patties. Melt the butter in a skillet and cook the patties until brown on both sides. Serve burgers on the buns with lettuce, tomato and condiments of choice. Yield: 4 servings.
