This is an easy version of buffalo wings. And a perfect Super Bowl snack!
Buffalo Chicken Bites
1/3 cup flour
Salt, pepper, garlic powder, onion powder, and cayenne pepper
1/4 cup cayenne pepper sauce
1 tsp. hot sauce
1 tsp. Worcestershire sauce
2 Tbsps. butter
1 lb. chicken, cut into 1" inch chunks
Celery, carrots, blue cheese dressing
Mix together the flour and spices in a bag or bowl. Add chicken and coat in the flour mixture. In a skillet, heat 1 Tbsp of vegetable oil, add chicken and cook, stirring often, until well browned and cooked through, about 10 minutes.
While chicken is cooking, combine the cayenne pepper sauce, hot sauce and Worcestershire sauce in a small saucepan, bring to a boil over medium heat and cook 1 minute. Remove the pan from the heat and stir in the butter.
Add the pepper sauce mixture to the cooked chicken and cook aobut 1 minute, making sure all the chicken gets coated in the sauce. Serve with the celery, carrots and dressing.
You can also choose not to coat the chicken in the flour mixture and just saute it in the vegetable oil. Without the coating, it will be more South Beach friendly and that helps your New Years' resolution stay on track!
