Red Beans & Rice
Easy - simple - nutritious. Total cost - $10.55 Feeds 4-6 very hungry people
Crockpot alternative: cook red bean mixture on low 6-8 hours
Make and add your rice when you get home or have it ready in your rice maker & just add it
Make your cornbread ahead of time or fresh.
Fresh takes about 20 minutes, so it depends on your time constraints
and how fast you need to get dinner on the table.
$0.25 ½ C olive oil warm at the bottom of large pot
$0.25 1 yellow onion - chopped - add as you chop
$2.00 sausage or kielbasa / or vegetarian sausage- sliced - add as you chop (easy to make vegan or vegetarian)
$0.50 2 stalks celery - chopped -add as you chop
$1.00 1 green pepper - chopped -add as you chop
$0.10 2 TBS garlic - minced -Stir in for about 30 seconds before adding water & seasonings
$0.00 5 C water -add to pot
$2.00 1 bag cooked red beans or two 15oz cans red beans or 1 large can red beans
rinsed well & add to pot
$0.05 ½ tsp cayenne pepper - add to pot
$0.05 1 tsp thyme - add to pot
$2.00 2) 15oz cans of tomatos - stewed or diced - or fire roasted -add to pot
$0.05 ½ tsp pepper - add to pot
Stir well & cover & start your rice & cornbread
$0.05 1 tsp salt - ADD SALT AT THE VERY END just before serving or it toughens the beans beans
$1.00 2 cups cooked rice - white or brown
Mix the cooked rice into the red bean mixture
Stir well & cook for another 1-3 minutes
$1.25 Corn bread cost - follow directions on corn meal package
$10.55 TOTAL COST
Serves 4 - 6 really hungry people.
