For a perfect snack, lunch, appetizer or even dinner, there is nothing better than bruschetta. Simply a way to serve tomatoes and cheese on garlic bread, bruschetta is a healthy choice that tastes so good you will crave it. It’s the perfect go-to meal when you just want something easy. This recipe is so delicious, healthy, and simple; you will want to make it often.
In the United States, most people pronounce it “bru-sheta”, but in Italian it’s “brus-ketta”. This dish has a long history, and is prepared many different ways depending on the region. It was originally a way to enjoy stale bread, by rubbing it with olive oil and garlic.
Bruschetta is another way to get tomatoes in your diet. A great source of lycopene (a powerful antioxidant) and vitamin C, tomatoes are really good for you; and fresh tomatoes are available year-round.
Ingredients for making bruschetta:
- 4 slices of Italian or French bread
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 2 medium tomatoes, chopped
- 2 tsp. basil
- 1 tsp. oregano
- 2 tablespoons balsamic vinegar
- 8 tablespoons parmesan, shaved or shredded
Directions for making bruschetta:
Mix together the tomatoes, basil, oregano, and balsamic vinegar. Set aside.
Heat the oil on medium heat in a large skillet; add the garlic and cook for a couple minutes or until the garlic browns just slightly. Move the garlic to the sides of the skillet and put the bread slices in the skillet – cook on one side, then flip to the other side. When golden on both sides, sprinkle the tops of each with 1 tablespoon parmesan cheese; remove the bread from the pan. Put the cooked garlic into the tomato mixture and stir to incorporate. Top each slice of the bread with the tomato mixture, then with the remaining parmesan cheese. Enjoy!
