When was younger I worked across the parking lot from a hospital. Frequently I'd head to their cafe where I'd purchase some broccoli salad for lunch. This salad is so easy and is perfect for a summer potluck. It would also be a great side along some grilled chicken.
Broccoli Salad
- 1 bunch raw broccoli, chopped (don't use the main stem part)
- 1/2 c. raisins
- 1/4 c. sesame seeds
- 10 slices bacon, fried and crumbled or you could use 1 bottle of prepared real bacon bits (can be found near the salad dressings at the grocery store)
- 3/4 c. onion, diced
- 1 c. mayonnaise
- 2 TBSP. vinegar
- 1/2 c. sugar
Mix together the broccoli, raisins, sesame seeds, bacon, and onion in a large bowl. In a small bowl mix mayonnaise, vinegar, and sugar for the dressing. Add the dressing to the broccoli mixture and stir gently to coat. Refrigerate until ready to serve.
