Broccoli salad

Today I am going to share a refreshing salad with you, using fresh broccoli, lemon and garlic.  This salad is a great source of vitamins and minerals, and it tastes so good you will forget that it is healthy too!

Broccoli salad

  • 1 pound broccoli
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 medium clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Trim off leaves and bottoms of broccoli stalks, and split thick stems lengthwise.  Cook, covered, in a small amount of salted water until just tender.  Drain and chill.  Combine olive oil, lemon juice, garlic, salt and pepper.  Drizzle over thoroughly chilled broccoli and serve.
