Some people eat broccoli because it’s good for them; here is a recipe you’ll eat because it tastes so darn good. It’s a broccoli sauce that is so amazingly delicious you will make it time and again. It will give you broccoli in a whole other way and you will love it! Having trouble getting kids to eat broccoli? Try this!

The combination of the green broccoli and the red bell peppers makes this visually appealing, as well. It’s a lovely accompaniment to any main dish, and is perfect when you entertain. Don’t save it just for special occasions, however, as it makes a perfect meal in itself – throw in some pasta and sprinkle it with parmesan for a scrumptious main dish!

For those of you who look for nutrition in your food – this is packed full of it! Broccoli is high in Vitamin A and Vitamin C with a little calcium and iron; red bell pepper is high in Vitamin C and iron. Add the protein and fiber of peanut butter and the nutritional values of sesame oil (Vitamin K, Omega 3 and Omega 6), and you see that this is a healthy dish. That it’s delicious is a side benefit!

Broccoli and Peanut Butter Recipe

Ingredients for Broccoli and Peanut Butter:

  • ¼ cup peanut butter (creamy or crunchy – doesn’t matter)
  • 1 tablespoon lime juice (fresh is best)
  • 2 ½ tablespoons hot water
  • 2 tablespoons sugar
  • 1 ½ tsp. dark sesame oil
  • ¼ tsp. red pepper flakes
  • 2 tablespoons olive oil
  • 3 cups fresh broccoli florets
  • ½ cup red bell pepper, diced

Directions for Broccoli and Peanut Butter:

In a small saucepan, combine the peanut butter, lime juice, water, sugar, sesame oil and red pepper flakes. Over low heat, stirring constantly, heat until the peanut butter is melted. Set aside.

Heat the olive oil in a large skillet over medium-high heat (it will heat quickly, so don’t leave it). Add the broccoli and the red bell pepper. Stir fry 3 – 4 minutes until the vegetables are tender-crisp. Remove from the heat and stir in the peanut butter mixture. Serve warm or at room temperature.
