Broccoli cashew salad

This super simple and affordable salad is perfect for summertime. It's also incredibly easy to customize! Add in your fave veggies or sneak in extra bacon. Play around with the recipe and make your perfect summer salad.

1 lb bacon
1 cup mayo
2 tsp cider vinegar
½ cup sugar
2 lbs broccoli florets
1 cup cashews, roasted
¼ red onion, finely chopped

Cook the bacon and crumble. Let cool. In a bowl, whisk together the cider and sugar until the sugar has dissolved. Stir in the mayo and mix well. Add in the bacon, broccoli, and cashews. Chill before serving. It's as simple as that! Enjoy your tasty summer meal with friends and family.
