Brining light meats and poultry will keep them moist when you grill them. There’s nothing worse than dry, dry chicken breasts. Just follow these simple instructions for grilling your chicken without worrying that your great looking and delicious smelling chicken will cause cotton mouth. This is the most basic of brining methods. It is simple, yet so effective for getting moist, juicy results off the grill.
¼ cup sugar
¼ cup salt
1 quart water
4 chicken breasts
Mix the sugar, salt, and water until dissolved.
Place the chicken breasts in a baking dish. Pour the brining solution over it.
Cover with plastic wrap, and let sit in the refrigerator overnight, or at least for several hours.
Before grilling, rinse the salt off of the chicken with water. Grill as usual, for instance by using homemade barbecue sauce as you normally would.
Use a double or triple batch of the brining solution for larger amounts of meat.
