This is so savory! The sweet fruit on top really creates such a wonderful mix of flavors. I found my Brie at BJ’s Wholesale club. This recipe makes a great dish for parties. See the slide show below for more pictures of this pretty dish!
Fruit Topped Brie
- ½ cup dried pineapple, chopped
- 1 tbsp dried cranberries
- 1 tsp balsamic vinegar, pomegranate infused*
- 2 tbsp brown sugar
- 2 tbsp water
- Salt, a dash
- ½ tsp dried rosemary, chopped (optional)
- 1 round Brie cheese, 10 ounce or 19.6 ounce
- Crackers
Pre heat oven to 400*.
In a non-stick pot, add fruit, sugar, water, vinegar and salt.
Bring to a boil then reduce to medium heat. Stir until thickened.
Remove from heat and add rosemary.
Set aside.
Remove top rind from cheese.
Place into a glass pie plate.
Spoon fruit mixture on top of cheese.
Bake for 12-14 minutes.
Serve with crackers.
Store leftovers in refrigerator, covered tightly.
* You can also use regular balsamic vinegar.
