Breakfast Taco (Photos)

Everyone has had this decision to make at some point in their life. What would you like for dinner? Am I right? Usually the answer is 'I don't know' or 'whatever you want'? Here is a breakfast meal that will cost you less if you make it instead of going to your local Boston, Massachusetts Mexican place. It is really easy and it tastes great. It is only 229 calories per serving but the sodium is 464mg. Today's recipe is 'Breakfast Taco'. To cut back on the sodium intake lower the ingredient portion.

corn tortillas

  • 1 tablespoon

salsa

  • 2 tablespoons

shredded reduced-fat Cheddar

  • 1/2 cup

liquid egg substitute

  1. Top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds.

  2. Meanwhile coat a small nonstick skillet with cooking spray. Heat over medium heat, add egg substitute and cook, stirring, until the eggs are cooked through, about 90 seconds. Divide the scrambled egg between the tacos.
