Geyser Peak Winery –a Sonoma County winemaking pioneer – is coloring “outside the lines” with its two “Uncensored” releases.

The 2012 Uncensored White ($14) is an untraditional blend of some familiar varietals: viognier, sauvignon blanc, riesling, chenin blanc and chardonnay. The wine was fermented in stainless steel to showcase the characteristics of each of the five varietals without the presence of oak. The melding adds depth to the final vintage with floral, spice and fruit.

The pale lime-tinged straw hued blend opens with aromatic aromas of grapefruit, white flowers and sweet spice. Tiers of green apple, pear, lemon and jasmine aromas cascade off the palate with elegance.

Serve this young wine chilled along side mild cheeses, fruit salad and Asian dishes.

Uncensored 2011 red blend is brash, muscular and definitely not for “wimps.” This is an exciting combination of petit verdot, petite syrah, tannat, syrah, merlot, cabernet sauvignon and zinfandel. The cool weather during ripening allowed the grapes develop great fruit character and personality.

The color is deep, rich purple in the glass and a beacon to lush aromas of blackberry and plum.

But the excitement is the sipping. Deep chocolate, dark fruit and raspberry delight the palate with velvety texture and powerful body.

Break all the rules and pair this with mushroom fritters, avocado and blue cheese burgers or after dinner with a white chocolate torte.
