This is an oatmeal bread like no other. It’s a bread recipe has a unique taste which you will come to crave. Whether toasted and spread with melted butter and jam or in your favorite sandwich, there is something so pleasing and gratifying, that you will begin making this on a regular basis.

The scent of baking bread is such a tremendous experience that it can immediately send all your senses into overdrive. In the world of aromatherapy, this is a scent that can spiral you to a comfort zone like no other. Baking bread is such a wonderful experience -- the process of mixing and kneading is as fulfilling as the aroma enveloping your kitchen. When it’s done and you slice into it, it’s a feeling of triumph.

Oatmeal Bread Recipe

Ingredients for Oatmeal Bread (makes 2 loaves):

  • 2 cups boiling water
  • 1 tablespoon butter
  • 1 cup oatmeal
  • 1 package dry yeast
  • ½ cup warm water (105 – 115 degrees)
  • ½ cup molasses
  • 2 tsp. salt
  • 5 ½ - 6 ¼ cups flour
  • Melted butter for brushing on the loaves

Directions for making Oatmeal Bread:

In a large mixing bowl, combine the boiling water, butter, and oatmeal. Let stand for 1 hour (if you’re using quick oats, stand for 30 minutes).

Dissolve the yeast in the warm water, and stir into the oatmeal mixture. Add molasses, salt and as much of the flour as you can stir into the oat mixture.

On a lightly floured board, knead the dough for 6 – 8 minutes, adding more flour if necessary. Place the dough in an oiled bowl, turning it over to oil all surfaces of the dough. Cover with a damp cloth or plastic wrap and let rise in a warm, draft-free place (about 70 – 75 degrees) until doubled in size (about 1 hour).

Punch the dough down with a floured fist, divide it in half and let rest for 10 minutes. Shape each loaf by rolling into a rectangle with a floured rolling pin, then roll up the rectangle like a jelly roll, tucking the ends under the seamed side. Place in greased bread pans seamed side down, and brush with melted butter. Let rise again in a warm place until almost doubled (45 minutes) – do not cover.

Bake at 375 degrees for about 40 minutes. Remove the loaves from the pans, spread the top with melted butter, and cool on a wire rack.
