Many of us enjoy a good loaf of banana bread. Whenever there's overripe bananas at home, it's a very common practice to turn them into banana bread. Overripe bananas add a very pronounced flavor to this bread, as well as giving it a moist flavor. Many produce sections in the grocery stores regularly reduce the price on overripe bananas, so this gives us a good reason to make this bread!
One complaint about banana bread is that it's often full of sugar and fat, with little redeeming health benefits. Therefore, I'd like to pass along a recipe for a good banana bread that has bran added to it, so it's actually a pretty healthy bread. This recipe, "Branana Nut Bread", uses All-Bran to give it a good fiber boost. Notice the title is "Branana", since it combines bran and banana together!
This bread is assembled much like any banana bread. The dry ingredients are combined and set aside. Shortening and sugar are creamed together, along with eggs and vanilla extract. The mashed bananas go in at this point, followed by the bran cereal and chopped nuts. Finally, the dry ingredients go in to create a thick batter. This goes into a 9x5 inch loaf pan and it's now ready for the oven. It's good served warm, though it's much better to let it ripen overnight. This gives an improved flavor to the bread and helps it to slice easier.
The All-Bran cereal is easily found in the cereal section. These are shreds of bran and is one of the healthiest cereals out there. By using it in this bread, this is a clever way to get people to get some fiber in their diet! If you would like to make this bread even healthier, replace the white flour with whole wheat flour. At least half of the flour can be replaced with the whole wheat. Bear in mind that breads made with whole wheat flour are denser and heavier than when made with white flour.

BRANANA NUT BREAD
- 1-1/2 cups sifted all-purpose flour
- 2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup shortening
- 1/2 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1-1/2 cup fully-ripe mashed bananas
- 1 cup All-Bran cereal
- 1/2 cup coarsely chopped nuts
Sift together the dry ingredients and set aside. Cream together the shortening and sugar until fluffy. Add the egg and vanilla extract and beat well. Stir in the bananas, cereal and nuts. Gradually add the sifted dry ingredients and mix only enough to combine. Turn into a well-greased 9x5 inch loaf pan. Bake at 350 degrees for about 50 minutes or until it tests done. Remove from pan and cool completely before slicing. Yield: 1 loaf.
