Growing up my mother was always creating mouth watering dishes with herbs and vegetables from the garden and our weekly jaunts to the market.Our home was always filled with some delightful aromas of various Creole|Cajun cuisine such as Jambalaya, crawfish, red beans and rice, peach cobbler just to name a few.

Now that I am older my craving for these wonderful dishes are still present, but how I prepare them has changed. They are now transformed to a more fresh, creative and healthy alternative of vegan.

On my quest I am always learning and finding wonderful tips, advise, and books that take me to another culinary high. This week on my odyssey to the local library I found another vegan treasure "Vegan Soul Kitchen" by Bryant Terry. Mr. Terry is an award-winning eco-chef, food justice activist, author, and Food and Society Policy Fellow. He coauthored "Grub: ideas for and Urban Organic Kitchen. From greens to gumbo he will take your taste buds on a mouthwatering soul food journey with fresh, healthy and creative exotic African-American cuisine.
