Fans of Gargoyles on the Square’s whimsical cuisine can now head to Chef Jason Santos’ new digs in the Financial District. Named after his signature hair color, Blue Inc. adds a huge splash of color to Broad Street and the Greenway this June 13.
“The response has been amazing,” said Chef/Owner Jason Santos, a recent contestant on Gordon Ramsay's "Hell's Kitchen." “There is a ton of energy and excitement around this project, it's very exciting!”
And so is his planned menu, which combines Asian, French and traditional American flavors with dazzling visual and textural twists, he says. His dabblings in molecular gastronomy are the culinary equivalent of an amusement park ride: liquid nitrogen salsa that smolders when it hits the plate; an orange gel that forms into noodles when it hits hot broth; black truffle “Dippin’ Dots”-like ice cream that arrives at tableside smoking; his signature calamari spaghetti with pastrami bolognaise and squid ink puffs, his signature crispy duck confit with mango sticky rice, and his Kurobuta pork belly with lemon sugar and watermelon pudding.
How does he come up with these ideas? “It's a leap of faith,” he explained. “It's just how my heads thinks, unfortunately/ fortunately it is out of my control. I like to be excited and I try to show that thru my food.”
It’s not all about wacky food, however. Santos raves about his cheeseburger, for example. “There is nothing better than a perfectly cooked seasoned cheeseburger,” he said. “If they are as good as I hope, you will cry yourself to sleep over it!”
Curious cocktail combinations will include the Blueberry Lemongrass Mojito with spearmint and topped with a sweet blueberry foam, the Lychee Martini with Yuzu and Siracha, and the Sub Zero Martini which will feature sake, lavender, and a liquid nitrogen infused honeydew granita. Non-alcoholic milkshake flavors include honey-dipped donut, butterscotch black truffle, and tiramisu.
Both lunch and dinner will be offered. The restaurant is being designed by designer Taniya Nayak who has been featured on HGTV, Food Network, the Oprah Winfrey Show, and NBC's Today Show. And there’s a patio!
Santos acknowledged that his timing may be a little challenge. “I believe the economy definitely affects business, but I truly believe if you have a good thing, reasonably priced, and offer something unique, then the economy is not an issue.”
From Somerville to Financial District? “I think the Financial District has a buzz about it; it truly is "downtown Boston," and the Greenway I believe is the next big thing!” he said.
When asked about the name of the restaurant, he said, “Blue is my trademark color, in my head that encompasses what/who I am and what I stand for, what I am known for and who I want to become, and Inc.= rule the world...so with proper mathematics I essentially want to be the (Lady) Gaga of the food world: fun, crazy, controversial, exciting and innovative!”
But what about his former restaurant, where he honed his craft? “Gargoyles is an end of an era” for me, he said. “I will do fine, they will do fine, it was a good run...now it's my turn!
