For all you blue cheese lovers, this is a twist on the traditional potato salad using blue cheese and red potatoes. This recipe will be a hit at your next potluck or summer picnic.
Blue Cheese Potato Salad
- 3 lbs. red potatoes
- 1 c. sour cream
- 1 clove of garlic, crushed
- 1/2 c. mayonnaise
- 1/2 c. blue cheese crumbles
- 1/4 c. diced red onion
- 4 oz. cream cheese, softened
- salt and pepper to taste
- dill or parsley for garnish
Directions: Cut potatoes into bite sized, uniform chunks. Place in a large pan and cover with water. Add a pinch of salt to the water. Bring pot to a boil and continue boiling on medium heat for 20 minutes. Immediately drain potatoes in a colander under cold water to stop the cooking process. While potatoes are boiling mix together the rest of the ingredients in a large bowl. When potatoes are cool add them to the dressing mixture and combine. Refrigerate for at least one hour before serving. Garnish with dill or parsley.
