Black Bean Pepper Jack Dip

With an extra 8 oz. package of Cabot’s Pepper Jack Cheese left over from the Pimento Cheese recipe plus a 10 oz. can of black beans, dip beckoned Boston Easy Meals Examiner. More grub to cheer on the Patriots!

INGREDIENTS:

1 package (8 oz.) Cabot’s Pepper Jack Cheese

1 can (10 oz.) Black Beans (Trader Joe’s used here.)

1 Tbsp. Butter

1 Tsp. flour

4 oz. milk

6 – 8 oz. tortilla chips (Number 9 Stoneground Corn Tortilla Strips here.)

Serves 3 -4

METHOD:

Shave about 1 Tbsp. of butter into greased crock pot. Turn crock pot on HIGH. Sprinkle 1 tsp. of flour over the butter shavings. Grate the cheese. Once butter melts, add 4 oz., of milk and stir. Add grated cheese and stir. Open and drain the can of black beans. Add black beans to mixture and stir. Once the cheese and beans are mixed thoroughly, turn crock pot down to LOW.

Cover and cook on LOW for 3 hours. Stir occasionally. For the last hour, tip the crock pot cover a bit to let some steam escape.

Serve warm and use tortilla chips/strips.
