Do you want to make the Best potato salad for Labor Day? I normally do not give out my secret recipes but I am making an exception this holiday. Straight from the farm gardens of northern Minnesota. This is an average recipe but you can half it or double it, it serves abut 8-10 people. Here it is:
5 Pounds of white potatoes
1 bunch radishes
1 bunch green onions
1/4 cup green olives
3 tablespoons yellow mustard
1 1/2 cups mayo
salt, pepper and paprika
Use a very large bowl as all ingredients will be mixed together.
Bowl potatoes until tender, set aside to cool.
Bowl eggs, 10 minutes once boiling, set aside to cool.
Peel potatoes and cut into 1 inch cubes, put in bowl.
Separate eggs, yolks and whites and put in two bowls. Using a fork, mash whites and put in the bowl, set the yolks aside.
Peel cucumber, cut into small pieces, put in bowl.
Wash and but bottoms and tops off radishes, slice thinly and put in bowl.
Wash onions and cut off ends, cut in small pieces using half of the greens also, put in the bowl.
Dice olives into small pieces and put in the bowl.
Mash egg yolks with a fork, add mustard and mayo and mix until well combined making the dressing. (if you want more mayo it can be added)
Add dressing to salad and mix carefully until combined.
Add salt and pepper to taste. Lightly sprinkle with paprika.
