From time-to-time, I help out a chef friend and work in her kitchen in Washington DC as her “kitchen slave” or in the French kitchen brigade vernacular, I teeter between commis, tournant or marmiton. Yesterday somewhere during the daily chores of peeling heads of garlic, washing lettuce and lunch set up we were talking cake. I mentioned a recipe by Chef Nick Malgieri, the recipe is called Melissa’s Chocolate Pecan Cake and it is the best chocolate cake I ever tasted or made. In fact, I touted it in an earlier Best Of column.

I’ve worked with Nick Malgieri as a food stylist and had to make Melissa’s Chocolate Pecan Cake for his appearances. I was shaking in my clogs because I am baking challenged but the cake got thumbs up from Nick.
Melissa’s Chocolate Pecan Cake is very, very, very rich and a small sliver will do you. I’ve fed numerous people beyond the suggested 16 servings.
