Unless you eat a lot of bananas, you are probably tossing out a few at the end of each bunch. You can use them to make this recipe and so many other banana recipes that require ripened bananas (see the recipes at the end of this article).
Actually, if you want ripe bananas immediately and don’t have any on hand, go to any of the larger grocery stores. Each store usually keeps a few ripe ones on hand for sale. Or, if you want to ripen your bananas within a day, put them in a paper bag, stick in an unpeeled apple, fold over the top, and you will have ripened bananas within a few hours (the apple emits a gas that speeds the ripening process).
Best Banana Muffin Recipe
Ingredients for Best Banana Muffins:
- 3 large bananas, sliced
- ¾ cup sugar
- 1 egg
- 1 tsp. baking soda
- ½ tsp. salt
- 1 ½ cups flour
- 1/3 cup butter, melted
Directions for making the Best Banana Muffins:
Mash the bananas in a large bowl. Add the other ingredients and beat together just until well incorporated (don't over-beat). Fill muffin tins (lined with paper liners) 2/3 full. Liberally top with crumbly topping (see recipe below). Bake for 15 minutes at 400 degrees.
Crumbly Topping Recipe
- 1/3 cup brown sugar
- 2 tablespoons flour
- ¼ tsp. cinnamon
- 1 tablespoon butter, melted
