Mother's day is this weekend! There's nothing nicer you can do for the special mom in your life than make a delicious homemade breakfast. I personally love anything on the sweet side for breakfast, and you can never go wrong with baked French toast in my book. My family always makes a delicious apple cranberry french toast for Christmas morning. It is rich and decadent, but it also has a lot of butter and sugar.

I recently made this Berry Baked French Toast for a few friends for breakfast and it would be perfect for Mother's Day brunch. It is delicious and easy to make, plus it doesn't have any butter and only three tablespoons of sugar! You can customize this with any fruit you like. The original recipe called for peaches, but I thought it would be great with berries.

Berry French Toast Bake (recipe adapted from Ellie Krieger)
1 larg baguette
4 whole eggs
4 egg whites
1 cup low fat milk
1 tsp vanilla
1 bag frozen mixed berries
3 tblsp brown sugar
1/4 tsp cinnamon

Spray a 9x13" pan with cooking spray. Slice the baguette into 1/2" slices and arrange in a single layer in the baking pan.

Whisk together eggs, egg whites, milk and vanilla. Pour the egg mixture over the bread in the pan.

Top with frozen berries. Sprinkle brown sugar and cinnamon on top.

Cover and refrigerate over night.

Preheat oven to 350º. Cook uncovered for 40 minutes. Serve with maple syrup.
