Berries with marscarpone

Since Independence Day is this Sunday, I thought it would be fun to share an easy red, white and blue recipe for the occasion, with an Italian twist of course.  Nothing is more satisfying on a hot summer day than a cool bowl of berries.  In my recipe, I have combined the freshest summer berries with marscarpone cheese, the luscious cream cheese that is often found in tiramisu. 

Marscarpone cheese can be found in any Kroger or Publix right here in Nashville, usually in the fancy cheese section.  Happy 4th of July!

Berries with marscarpone

  • 2 cups marscarpone cheese
  • 1/2 cup confectioner's sugar
  • 1 tablespoon lemon zest
  • 1 pint strawberries
  • 1 pint blueberries
  • 3 teaspoon sugar

Mix cheese, confectioner's sugar and lemon zest until smooth and combined.  Mix berries with sugar, and let stand for at least ten minutes.  Spoon berries into dessert dishes, then top with marscarpone.
