For beginner cooks an easy food to prepare are eggs. Boiled, scrambled and fried eggs are quick and easy to prepare.
When purchasing eggs always check the expiration date and try to use the eggs before the expiration date, though consuming the eggs (cooked) on the expiration date or a day or two after is fine.
To cook a boiled egg, fill a saucepan with cold water to totally cover the eggs. Carefully add eggs, add a teaspoon of salt (makes for easier peeling of eggs), place over medium heat, let water come to a boil, then start timing the eggs. For soft cooked eggs allow 3-4 minutes to boil. For hard-boiled eggs allow 10-12 minutes. Remove saucepan from heat. Let eggs sit in hot water for 2-3 minutes, carefully drain water.
For soft-boiled eggs, lightly crack eggs, gently peel shell off of eggs and place eggs in dish. Season eggs with salt, black pepper and a bit of butter.
For hard-boiled eggs, add ice cubes to pan of eggs and let set for 15 to 20 minutes. Remove eggs and refrigerate until ready to use. If wanting to use the eggs immediately, lightly crack egg shell, run cold water over cracked eggs. Carefully peel egg shells. Hard-boiled eggs will stay good refrigerated for 3 to 4 days.
BASIC SCRAMBLED EGGS
Ingredients:
- 1 T. butter
- 2 eggs
- 1 T. water
- Salt & black pepper, to taste
Directions:
Place eggs in bowl with water, salt and black pepper. Using a wire whisk whip eggs until light in color.
Using a small skillet with cooking spray place skillet over low heat. Add butter, let melt then pour in beaten eggs. Using a spatula, carefully lift up edges of eggs to let uncooked portions run underneath. Then carefully fold over eggs while cooking. When eggs are no longer wet, just moist, turn off heat and let eggs set for 2-3 minutes. Remove eggs from skillet to plate.
Suggestion: For variation add 1/4 cup of your favorite shredded cheese to the egg mixture before cooking.
FRIED EGGS
Ingredients:
- 1 T. butter, cooking oil or bacon or sausage grease (optional)
- 2 eggs
- Salt & black pepper, to taste
Directions:
Using small to medium size skillet, spray with cooking spray. Add oil and place skillet over low-medium heat. Carefully crack eggs one at a time and place in skillet (try to avoid breaking egg yolk). Season with salt and pepper. Let eggs cook to your desired doneness. Using a spatula carefully remove eggs from skillet.
You can cook the eggs sunny-side up or turn the eggs over (over-easy) and cook to desired doneness.
Another way to fry eggs, sprinkle a bit of water over each egg yolk and cover skillet to cook to desired doneness.
