Tender pieces of beef and potatoes in a delicious sauce – this is the best beef stew recipe ever! It has a taste all its own and sticks in your mind forever. The beef is cooked long enough to make it so very tender and the flavor of the gravy is amazing. This takes beef stew to a whole other level!
This is a Thai recipe that has become a family favorite. Once you taste it, you won’t want beef stew any other way.
Any ingredient in this recipe can be purchased in the international section of most grocery stores. For those of you that wonder about the fish sauce, don’t worry – you can’t taste it, as it blends well with all the other ingredients. In fact, each of the ingredients makes the whole dish incredible. For those of you who like spicy – add more curry paste. For those of you who don’t like spicy – add a little curry, because the flavor is simply delicious.
Beef Stew Recipe (otherwise known as Masaman)
Ingredients for Beef Stew:
- 2 cans of coconut milk
- 2 ½ tsp. Thai curry paste (green)
- ¼ cup fish sauce
- 2 pounds beef stew meat, cut into bite-sized pieces
- ¼ cup sugar
- 6 potatoes, washed, unpeeled and cut into bite-sized pieced
- 1 medium onion, chopped
- ½ cup unsalted peanuts, dry roasted
Directions for Beef Stew:
In a large pot, add the coconut milk, curry paste, and stew meat – stir to blend. Add the sugar and fish sauce. Bring to a boil over medium heat, then reduce heat to simmer and let cook for about an hour.
Taste the sauce to make sure it has the sweetness you desire – add more sugar if you would like it sweeter. Add more curry if you want it to be spicier. Add the potatoes, chopped onion, and peanuts. Stir and bring to boil, reduce heat to simmer and cook for 40 minutes more or until the potatoes are tender. You can serve over rice or by itself. Tastes great with a loaf of warm, crusty bread.
