The beef and other ingredients blend so well that they create an amazing taste; it makes leftover beef better the second time around. It’s an easy concept really, leftover beef combined with potatoes. It’s the ingredients in the sauce that make it oh-so-special.
This is actually a French recipe that’s been around for years. It’s otherwise known as Boeuf en Miroton. There are many variations, but this is one that’s tried and true.
If you don’t have leftover beef, you can make it specially to use for this recipe. Simply simmer a small roast beef on the stovetop until tender or you can purchase sliced beef from the deli.
If you have leftover potatoes – whether they are mashed, baked, or scalloped – use them for this recipe. It makes a wonderful base for this recipe.
To get the best taste and texture for the bread crumbs, start with fresh bread. It’s easy to do; just rub slices of fresh bread over a cheese grater. Fresh crumbs make a wonderful difference.
Leftover Beef Recipe (Boeuf en Miroton)
Ingredients for Leftover Beef:
- 1 pound leftover beef, thinly sliced
- 5 tablespoons butter (divided)
- 1 cup onion, finely chopped
- 3 tablespoons flour
- 2 cups beef broth
- 1 tsp. salt
- ½ tsp. pepper
- 3 tablespoons vinegar
- 5-6 medium potatoes, cooked and sliced
- 4 tablespoons fresh bread crumbs (made by rubbing bread over a food grater)
Directions for Leftover beef:
Saute the onions in 3 tablespoons of the butter until the onions start to brown. Add the flour and stir continually for 1 minute. Add the broth, salt, pepper, and vinegar – stir until thick. Bring to a boil and simmer for 15 minutes (add more broth if too thick).
Butter a casserole dish and arrange the cooked and sliced potatoes over the bottom of the dish. Sprinkle them with salt and pepper if they aren’t already seasoned.
Arrange the sliced beef over the potatoes. Pour the onion mixture over the beef. Sprinkle the bread crumbs on the top and drizzle the remaining 2 tablespoons butter (melted) over the crumbs.
Bake at 450 degrees for 15 minutes.
