Beef pot pie recipe: Delicious way to use leftover beef

Pieces of beef and potato in a delicious gravy, covered with a flaky crust – this recipe is hard to resist. Homemade pot pie should be one of the wonders of the world, as it makes everything perfect if only for a few minutes. Here is a recipe that allows you to use any leftovers and repurpose them into a meal so amazing, it will be better the second time around.

This recipe is so versatile that you can cut up any type of beef, any type of potatoes, and any type of vegetables, put them in a perfect gravy, then cover them with a crust. Leftovers are a cook’s dream ingredients.

Make this as easy as possible by buying the crust. The refrigerator section of most grocery stores will have rolled-up Pillsbury crusts. Simply unroll one and put it on the top – the taste and texture are good and the ease of use is wonderful when you don’t feel like taking the time to make your own crust.

Beef Pot Pie Recipe

Ingredients for Beef Pot Pie:

  • Unbaked pastry to cover the top of baking dish used
  • 4 cups beef broth
  • 2 tablespoons sugar
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. garlic
  • 1 tsp. rosemary
  • 3 tablespoons brandy (optional)
  • 4 tablespoons butter
  • 5 tablespoons flour
  • 3 cups beef, cubed
  • ¾ cup carrots, cooked and sliced
  • 1 cup corn kernels
  • 3 cups potatoes, cooked and cubed

Directions for making Beef Pot Pie:

Put the broth in a saucepan and heat to boiling – remove from heat. Add the sugar, salt, pepper, garlic, rosemary, and brandy – stir until blended.

In large skillet, heat the butter over medium heat until melted and bubbly (stirring constantly with a whisk), add the flour and cook, whisking continually, for 1 minute. Add the broth mixture and stir until thickened. Add the beef, carrots, corn and potatoes. Taste for seasoning level and add extra, if needed.

Pour the mixture into a large enough baking dish to accommodate it (a 9 x 13 will work well), put the crust over the filling, and make slits for steam to escape. Bake at 450 degrees for 40 minutes or until golden brown. Let sit for 15 minutes before serving.
