There is nothing more disappointing than attending a party on an empty stomach only to find that there are no options for you at the dinner table. Sometimes the Gluten-free lifestyle can make you feel like your stomach is getting the short end of the stick. However, it does not have to be that way on this Super Bowl Sunday. If someone you love suffers from Celiac Disease or gluten sensitivity, tickle their taste buds with some of these favorite Super Bowl recipes. There is no reason you have to prepare two separate menus for your party guests either. By swapping out a few simple ingredients, you will score a touchdown for your entertainment efforts.
Cold Spaghetti Salad
1- 12 oz. box Fusilli Pasta (Schar Brand)
1/2 cup lemon juice
1 bunch chopped green onions
4 stalks chopped celery
1- 6 oz. can chopped black olives
1 can pimientos (drained)
1/2 cup Kraft mayo
Salt, pepper, and a dash of garlic salt to taste.
*In a large bowl, combine green onion, olives, pimientos, celery and lemon juice. Let marinate overnight. Cook pasta accordingly. You should rinse this pasta, but do not wash. Toss immediately with marinade and 1/2 cup Kraft Mayonnaise. Add spices and adjust mayo content according to preference.
Sweet BBQ Chicken Wings
1 pkg. chicken wings
1 Bottle Sweet Baby Ray's Original BBQ sauce
1/2 stick melted butter
Lea & Perrins Worcestershire Sauce
Salt, Pepper, and Tony Chachere
*Season uncooked chicken with spices and Worcestershire sauce. Broil on low (approximately 30 minutes) in oven until cooked thoroughly. In a large bowl, melt butter and add cooked wings. Add desired amount of BBQ sauce to mixture. Secure bowl with a lid and shake contents until mixture is evenly spread.
Baked Potato Dip
1-24 oz container Daisy Sour Cream
4 oz. Kraft cheddar cheese (buy the block and grate)
2- small pkgs. Hormel Bacon Pieces
1 bunch chopped green onions
1 bag H-E-B Organics Blue Corn Tortilla Chips
*Grate cheese and chop onions. In a medium sized bowl combine all ingredients. Chill for 1 hour. Serve with chips.
1 lb. bag Principe Del Mar brand Natural Calamari Rings
1 Bag Goya brand Rice Flour
Salt, pepper to taste
*Find frozen Calamari rings at your local Super H-E-B. In a small bowl, pour approximately 1-cup rice flour. Baste defrosted Calamari with Olive Oil and roll in rice flour. In a large skillet, pour about 1/2 inch Olive Oil into pan and sauté. Flip over and repeat. Calamari will be a light brown when done. Season with salt, pepper, and dip in marinara sauce of your choice.
Gluten Free Chocolate Chip Cookies
1 Package Betty Crocker Gluten Free Chocolate Chip Cookie Mix
1 Stick Butter - Softened
1 Teaspoon Organics brand Gluten Free Vanilla
½ bag Chocolate Chips
*Double these portions for big crowds. Combine all ingredients as listed on the box. Add ½ bag chocolate chip morsels. Heat oven to 350 degrees. Each batch (approximately 9 cookies) takes about 8-10 minutes.
Last, but not least, my favorite drink of the gluten-free persuasion is Sprecher Cream Soda. It contains no caffeine and should find a seat at your party this Sunday. Now, kick back, relax, and enjoy the game!
