Beans and Rice Recipe
Ingredients for Beans and Rice:
- 4 cups cooked rice
- 1 ½ cups frozen corn
- 1 can black beans
- 1 cup cheese, grated
- 1 cup salsa
- Fresh cilantro, chopped
- Sour cream (optional garnish)
Directions for making Beans and Rice:
Cook the rice according to the package directions. To 4 cups of the cooked rice, add in the corn and stir. Let it set for 5 minutes. Put the rice and corn in a casserole dish, top with the black beans, then evenly layer the salsa over the beans, then evenly distribute the cheese over the top. Bake at 350 degrees for 20 minutes. Sprinkle with fresh cilantro prior to serving.
