When it's time for a hot dog, a hamburger, or just a simple salad dish, slaw comes into the picture! Slaw is mostly just chopped shredded cabbage flavored with mayonnaise, salt and pepper. Some recipes are of the barbecued type, which we serve with pork. Sometimes, we add other ingredients to dress it up and give it a new flavor.
Let's take slaw and really make it special! The recipe I'm sharing is for "Bean and Bacon Slaw". This is a very flavorful slaw that can even act as a main dish. I've served it that way, as well as a side dish, too. It contains kidney beans, onion, and bacon to add flavor to the cabbage. Of course, it contains mayonnaise and a bit of vinegar that further flavors this special dish.
In looking in the recipe, you'll see it calls for kidney beans. I suggest draining the beans and rinsing them in a colander. This makes the beans more like fresh and gets rid of the coating that canned beans contain. For the bacon, you can fry it the traditional way or you can now get bacon already fried. This comes packed in plastic bags and sometimes in glass jars. This could be used if you prefer not to fry the bacon and it works equally as well. Use about 2/3 cup.
The slaw has more flavor if it's made ahead and the flavor are allowed to blend. Store in a covered container in the refrigerator and it will keep for several days. This would be very good for a light lunch. Serve along with crackers or toasted bread and a fresh vegetable and you'll have a good lunchtime treat. With main dishes, this would be a nice change from regular slaw.

BEAN AND BACON SLAW
- 8 slices bacon, fried crisp and drained
- 4 cups chopped cabbage
- 1/2 cup mayonnaise
- 1 tablespoon vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1 can kidney beans, drained and rinsed
- 1/4 cup chopped onion
Toss all the ingredients together lightly until well mixed. Chill before serving. Yield: 4-6 servings
