Batter Blaster to the rescue!
I am all for the homemade breakfast spread of pancakes, waffles, bacon, eggs, toast, etc... However, with families waking up at all different times of the morning, it's seemingly impossible to make this happen, these days.
The Organic Batter Blaster to the rescue! I spotted this product near the eggs in my local Waldbaum's ($3.99). I immediately looked at the nutrition facts and low and behold... I was impressed! Gone was the hydrogenated oil and the high fructose corn syrup... replaced with ingredients such as cane sugar and organic wheat flour, all in a can that contains no CFO's!
My next question: Would the pancakes hold muster? YES! I made them just as directed, which really is similar to basically squeezing out the batter as if it was whipped cream from a can onto a hot skillet. The pancakes were fluffy and tasty! Here was a 5 minute breakfast extravaganza that your kid can do on their own (provided you allow them too!). Now there is no reason to get up at the crack of dawn to make them breakfast. They can do it themselves!
With Batter Blaster, you can really go crazy with multiple uses for this. Throw in some chocolate chips, blueberries or strawberry slices. Make them in the evening and add a scoop of ice cream. OOOOOoooo... I have an idea! How about making a waffle and serving it with fried chicken and maple syrup? (recipe below)

AND SPEAKING OF MAPLE SYRUP..... my all time favorite is Maple Grove Farms, from Vermont (click for a great segment on the Today Show!).
Available nationwide, this pure syrup is Grade A, amber in color and deeply rich and complex in flavor. It costs a bit more, but it is completely worth it! While other syrups such as Log Cabin (wich now does NOT contain High Fructose Corn Syrup...OR any maple for that matter!) taste good.... don't you want the real thing? Buttermilk Fried Chicken Cutlets with Maple Syrup Glaze- Serves 4 people with sides
This Chicken dish is crispy, but with a very thin coating of crust.....it is a "little bit healthier"!
Ingredients
For Marinade
- 4 chicken cutlets, 1/4" thick
- 1 cup lowfat Buttermilk (the greatest ingredient to have on hand!)
- 1/4 cup Southern Seasoning (I like Stubbs, BBQ spice Rub, but use whatever YOU like!)
For Dredging
- 1 Cup all purpose flour
- 2 tbs. Southern Seasoning (again, the Stubbs)
- 1 tbs. pre-made pancake mix (I like Maple Grove Farms)
- 1 tbs. cornstarch
- 1 1/2 cups Peanut or Canola Oil
For Serving
- 3/4 cup warmed up Maple Grove Farms syrup blended with 1 tbs. sweet butter
- 4 Waffles made with Batter Blaster
Directions
- Mix together buttermilk and Southern Seasoning together
- Place chicken and marinade in seal and lock bag and marinate for at least 1 hour or overnight
- Take chicken out of marinade, discard liquid and pat chicken dry on paper towels
- Preheat oil until it reaches 325' in a large skillet with high sides
- In a separate bowl, mix together flour, pancake mix, cornstarch and seasoning
- Dredge chicken in seasoned flour mixture. For a thicker coating, place in buttermilk mixture again, and dredge a second time.
- Add chicken to oil, carefully placing it in the pan so as not to burn yourself
- Cook for 4-5 minutes, watching that the chicken is golden and then turn chicken over and cover pan
- Cook for 4-5 more minutes on the second side

- Uncover pan and cook 1 more minute (chicken should register to 160' internal temperature)
- Place lightly crispy, golden chicken cutlets on paper towel to drain
- Season with salt and pepper, place ontop of Batter Blaster Waffle and drizzle with the warm maple syrup-butter mixture over it.
- Serve with Cheesy Broccoli Rice and Cole Slaw

I am going to try this pancake can stuff!!! I hope it does not taste like the ones that your pour from a plastic container... Love your recipes! Next week I'm going to make the matzah balls!!!
Thank you, Jeffrie. This batter blaster is completely opposite from the plastic container things. I would NEVER recommend that! Especially when making your own is so ridiculously easy. For me, batter blaster had to be THAT GOOD to give it the thumbs up... and it was! It just cuts down 10 minutes of prep and 4 minutes of cleanup. That's 14 extra minutes of sleeping!
Batter Blaster is AWESOME. We love it at our house! I especially dig the waffles.
