You are in the mood for pancakes, but when you look in your cupboard, you do not have any pancake mix available. You do not have to look for an alternative meal or head out to the store; you can make pancakes from scratch. This is a basic pancake recipe and the pancakes come out thick and fluffy. Prepping and cooking this recipe takes 20 minutes total, and you will not have to worry about buying pancake mix from a box again.
1 ½ cups unbleached all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup whole or 2% milk, room temperature
1 large egg, room temperature
1 tablespoon distilled white vinegar
1 tablespoon vegetable oil
Cooking spray, as needed
Combine the milk and white vinegar in a cup or bowl. Let the mixture sit for 5 minutes as the milk sours. In another mixing bowl, combine the flour, sugar, baking powder, baking soda and salt. Add the egg and vegetable oil into the soured milk and whisk them together. Pour the liquid mixture into the dry ingredients and whisk again until the lumps disappears.
Heat a large iron skillet or flat pan over medium heat. Coat it with cooking spray and pour ¼ of the pancake batter into the skillet or pan. Cook until there are bubbles appearing on the batter surface, then flip the pancake over with a spatula. Cook until the pancake is browned on both surfaces.
Enjoy pancakes with butter and maple syrup or with chopped fruit. You can also add freshly whipped cream to top them off.
