Basic fried rice is a perfect recipe for after the holidays

Fried rice is one of the most versatile dishes to make. Vegetables and/or meat of your choice then you are good to go. After the holidays it can sometimes be days of leftovers for the picking. If you’ve never tried it before, you should give fried rice a try. It’s a tasty way to put those leftovers to a new use. Here is a simple recipe for your family. The beauty of this dish is that it is so versatile, so keep in mind the vegetables and meat options are entirely up to you.


4 Tablespoons oil

4 Cups of cooked white rice (cold)

Salt and pepper to taste

2 Tablespoons soy sauce

Your choice vegetable (approximately ½ cup)

Your choice meat (approximately ½ cup)

Chop up your vegetables and meat and set to one side. In a frying pan (or wok), add half the oil and scramble the eggs with the pepper and cook until lightly done. Set this aside with the vegetables and meat.

Next add the remaining oil to the pan and toss in the rice and meat. Break the rice a part if it is in clumps and stir fry a minute or so. Add the soy sauce and mix it in well. Last add the vegetables and eggs and fry until thoroughly heated. Serve hot with extra soy sauce on the side.
