Dating back to 1875 the Kentucky Derby has brought to us stories of inspiration, of will, of drama and of heartbreak. From fancy hats and mumbled “My Old Kentucky Home” lyrics to the official Derby cocktail the Mint Julep, this day is rich in tradition. But traditions are only made when one dares to try something new. So why not spice it up? Below is a cocktail dedicated to the courageous Barbaro, one of the most heroic, celebrated horses of our time.

What better a reason to break out your bartending tools than to pay homage to these spectacular horses, the very reason the Kentucky Derby exists. By devoting these lively libations to horses of years past, a new tradition begins to be carried on for generations to come.
Barbaro’s Tale
1 ¾ oz Four Roses Kentucky Bourbon
½ oz Gran Classico Bitter
6-8 fresh spearmint leaves
1 tbsp Sarabeth’s Strawberry Rhubarb Preserves
¼ oz simple syrup
½ oz fresh squeezed lemon juice
Muddle mint leaves for at least 30 seconds with firm pressure. Add all other ingredients and shake thoroughly over ice. Serve in a highball glass on the rocks and garnish with a fresh mint sprig and strawberry slice.
