Banana pancake recipe: Easy to make homemade pancakes

Banana pancakes are the ultimate! So moist and flavorful – not a strong banana flavor, but very subtle. There are pancakes, and there are pancakes – here is one that will top all others! Make a stack of these, add some butter, and drizzle your favorite syrup, and you will bite into just a little bit of heaven.

If you have some bananas that have over ripened, here’s a great use for them – the best bananas to bake with have patches of brown on their skin (the fruit is sweeter and more flavorful). If you have bananas that aren’t too ripe yet, it’s easy to ripen them in just a short while. Place the bananas inside a brown paper bag with an apple, fold over the top and let the bag sit on the kitchen counter for a few hours – voila! The apple emits a gas that will cause the bananas to ripen very quickly. (This is why you don’t want to keep apples too close to other fruits – they will make the fruit go through the ripening process more quickly.)

Banana Pancake Recipe

Ingredients for Banana Pancakes:

  • 1 cup flour
  • 2 tablespoons sugar
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • 1 egg
  • 1 cup milk
  • 1 tsp. vanilla
  • 2 tablespoons oil
  • 2 overripe bananas, slightly mashed

Directions for making Banana Pancakes:

Put all the ingredients, except bananas, in a large bowl. Mix with a whisk or electric mixer until well blended. Add the mashed bananas and stir just well enough to incorporate.

Put a hot oiled griddle or large skillet over medium heat. Once the griddle is hot, put the pancakes on by using a little less than ¼ cup of the batter for each. Flip the pancakes over when they are done on one side. Once both sides are cooked, serve them with butter and syrup.
