Balsamic peas offer a taste of spring in the middle of winter

Tired of winter vegetables? Wishing for a little taste of spring in the midst of all this cold and snow? With some canned (or frozen) peas and a few items from the 2nd Street Market, you can make a very nice side dish to help you remember what warm weather tastes like!

Mr. Garber can set you up with some terrific green onions, and Hydrogrowers has some wonderful balsamic vinegar (note: the peas will look greener if you use white balsamic vinegar, but regular balsamic vinegar will do just fine). Pick up some feta from Blue Jacket Dairy and you're all set (you'll need to supply your own mayo).

This is a great little side dish that can be served warm or cold. You can even add in some bits of faux bacon - or get some of the real thing from Landes Farms, right next to Mr. Garbers.

Balsamic feta and pea salad

  • 1# canned or (thawed) frozen green peas, rinsed and drained
  • 1/2 cup thinly sliced green onions
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons mayonnaise (or to taste)
  • 2 tablespoons balsamic vinegar
  • Black pepper to taste
  • Faux bacon, chopped, or fried real bacon, chopped

Mix together the peas, onions, feta cheese, and mayonnaise. Mix in balsamic vinegar, (faux) bacon if using, and season with pepper. Serve warm, at room temp or chilled. Store leftovers in the refrigerator.
