The air is crisp; the leaves will soon begin to change. Fall is here. It’s this reporter’s favorite time of the year. Family’s start gathering all across the nation for bonfires, holidays, and varies other gatherings. Squash is one of fall’s many bounties.
Recipe: Food Network
- 1 large acorn squash
- 3 tbsp. melted butter
- 3 tbsp. balsamic vinegar
- 2 shallots
- 6 sage leaves
- 1 tbsp. honey
- Pinch ground Coriander
- Salt and pepper to taste
- Toss 1 large acorn squash (cut into wedges) in a baking dish with 3 tablespoons melted butter.
- Add balsamic vinegar, 2 sliced shallots, 6 chopped sage leaves, 1 tablespoon honey, a pinch of ground coriander, and salt and pepper.
- Add 1/2 cup water and roast at 450 degrees F, 20 minutes; flip,
- Sprinkle with 1/4 cup hazelnuts and roast 20 more minutes.
