Baked tomatoes

The Nashville Farmers Market will soon have all sorts of lovely tomatoes available for purchase, so it is a great time to share a favorite recipe with you.  Of course, this recipe is great for any variety and color of tomatoes.  Pick your favorite, and they will sing on your tastebuds using this recipe.

Baked tomatoes

  • 4 firm ripe tomatoes, cut in halves and seeded
  • sugar
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons marjoram, crushed
  • 1/2 cup shredded Parmesan cheese

Put tomato halves, cut side up, in a shallow baking dish.  Sprinkle lightly with sugar.  Mix olive oil, garlic, salt, pepper and marjoram.  Spoon an equal amount onto each tomato half.  Sprinkle with cheese.  Bake at 350 degrees for about 20 minutes, or until lightly browned.
