Baked Salmon Healthy Meal

I often make this very moist and flavorful salmon for company because I can have it ready in less than half an hour. I like to serve it with rice, or a green vegetable and a tossed salad.

What You Need:
(Makes: 8 servings)

1 salmon fillet (2 pounds)
2 tablespoons of butter, melted
1/4 cup of white wine or chicken broth
2 tablespoons of lemon juice
1/2 teaspoon of pepper
1/2 teaspoon of dried tarragon

What to Do:
Pat the salmon dry. Place in a greased 13x9 inch baking dish. Brush with butter; set aside.

STEP 2) Combine the white wine or chicken broth, lemon juice, pepper and tarragon; pour over salmon.

STEP 3) Bake the salmon, uncovered, at 425 degrees for 20 to 25 minutes or until fish flakes easily with a fork.

STEP 4) Enjoy!
