Baked rice pudding recipe

Simple, homey and soul satisfying.  This rice pudding is sweet, spicy and decadent tasting without the fat associated with it.

Baked Rice Pudding Recipe

1 cup long grain white rice

1/2 cup dried cranberries

1/2 cup slivered almonds

1 egg, beaten

1/2 cup brown sugar or brown sugar substitute

1 teaspoon vanilla

1 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon each allspice and cloves

3 cups skim milk


Preheat your oven to 300 degrees.  Spray a 2 quart ovenproof casserole dish with nonstick spray. Put the rice, cranberries and almonds in the dish.  In a mixing bowl, mix the egg, sugar, vanilla, spices and milk.  Pour over the rice mixture in the casserole dish.  Cover and place in the middle of your oven.  Bake for 1 1/2 hour to 2 hours, or until rice is cooked through.  Serve hot or cold.
