Baked peaches


Peaches are plentiful at the Farmers Market right now, so let's make a classic Italian dessert using another favorite Italian confection - amaretti cookies.

Amaretti cookies are crunchy nuggets of almond goodness, and can be found in Italian specialty markets right here in Nashville at Lazzaroli Pasta and Coco's Italian Market.  They are wonderful sprinkled over vanilla ice cream, or enjoyed with your coffee.

Your kitchen will smell like heaven while this is baking, so let's get cooking!

Baked peaches

  • 1/2 cup blanched almonds, finely chopped
  • 1/2 cup amaretti crumbs
  • 1/4 cup sugar
  • 1 tablespoon chopped, candied orange peel (optional)
  • 6 large, firm peaches
  • 1/3 cup sherry or Marsala

Place amaretti cookies in a sealable plastic bag, and smash the cookies with a rolling pin or heavy object to make your amaretti crumbs.  Combine almonds, crumbs, 2 tablespoons sugar, and orange peel; set aside.  Peel peaches, cut in half, and remove pits.  Lightly fill peach halves with almond mixture.  Place in a baking dish, pour sherry over peaches, and sprinkle with remaining sugar.  Bake at 350 degrees for 15 minutes.  Serve either hot or cold.
