Baked oatmeal recipe


Baked oatmeal is a delicious, nutritious, inexpensive breakfast

Breakfast doesn't have to be a rushed, crazy affair in the morning. Your children don't have to eat cold cereal, instant oatmeal or some kind of sugar and fat-filled toaster pastry. You can make them a hot, fast breakfast without spending a fortune at the local fast-food drive thru window. Make this baked oatmeal ahead of time, and you can reheat in the microwave in the morning. Serve with a glass of milk and extra fruit on the side, and you're children will have full tummies when the run out the door to school in the morning.
Baked Oatmeal
2 cup rolled oats (not quick cooking)
3/4 cup milk
1/2 cup applesauce
2 Tbsp. butter, melted
1/4 to 1/2 cup brown sugar, firmly packed (or use Splenda brown sugar blend)
1 large egg
1 tsp. baking powder
1/8 tsp. salt
dash ground
dash ground nutmeg
Choose your mix-ins:
peeled, diced granny smith apples
diced canned peaches
sliced strawberries (fresh or frozen)
blueberries (fresh of frozen)
shredded coconut
chopped pecans
chopped almonds
chopped walnuts
raisins
dried cranberries
dried apricots
you could even subsided some of the milk and add a flavored yogurt.
Directions:
In large bowl, mix together all ingredients.  Place into 8x8-inch baking dish. Bake at 350*F for about 20 to 25 minutes, until baked through. Yields: 8 to 10 servings. Serve with warm milk over top, if desired
Rachael's Recipe Notes:
You can sprinkle more nuts, brown sugar and coconut on top for a crunchy top.
