Baked Bow-Tie Pasta and Winter Squash

In this recipe, bow-tie pasta pairs with winter squash and parmesan cheese for a creamy flavorful casserole. Enjoy!

Ingredients:

  • 1 box (16 oz) bow-tie (farfalle) pasta
  • 2 tablespoons butter
  • 1 large sweet onion, chopped
  • 2 packages (10 oz each) frozen winter squash, thawed
  • 1 ¼ cups Progresso® chicken broth (from 32-oz carton)
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • ½ teaspoon salt
  • 1 cup shredded Parmesan cheese

Directions:

  1. Preheat oven to 375°F.
  2. Spray 2-quart round baking dish with cooking spray.
  3. Cook and drain pasta as directed on box.
  4. Meanwhile, in 12-inch skillet, melt butter over medium heat.
  5. Add onion; cook and stir over medium-high heat about 5 minutes or until soft and beginning to brown. Stir in thawed squash, chicken broth, thyme and salt.
  6. Cook and stir 3 to 5 minutes or until slightly thickened.
  7. Stir in 1/2 cup of the cheese.
  8. In large bowl, toss pasta with squash mixture. Spoon into baking dish; sprinkle with remaining 1/2 cup Parmesan cheese.
  9. Bake uncovered 10 to 15 minutes or until hot and cheese begins to brown. (Serves 6)

Tip: Using frozen winter squash is an easy way to add flavor and nutrients to this creamy bow-tie pasta dish.
