Bahama Breeze Island Grille: The tropics heat up Las Vegas

Las Vegas is experiencing triple digit temperatures but Bahama Breeze Island Grille is bringing the coolness of the tropical beaches and hot nights filled with music and food to the desert.

The menu at Bahama Breeze blends the flavors of the Caribbean creating specialty dishes along with a twist on American favorites including seafood, chicken and steak along with salads and small plates.

One favorite is the Jamaican Jerk Chicken made with a half chicken marinated in authentic jerk seasonings and roasted, served with yellow rice, black beans and ripe plantains. The Calypso Shrimp Linguine is sautéed with garlic, scallions, tomatoes, a hint of spice and cream.

Fish is a big part of the menu and one option is the select a fish accompanied by a choice of yellow rice, hand-mashed potatoes or cinnamon mashed sweet potatoes and the chef's accompaniment. Seafood choices include salmon, tilapia, corvina or Ahi tuna and can be prepared wood-grilled or sautéed. The fish entrée can be served in a classic style topped with lemon butter, mango glazed with grilled pineapple salsa, almond crusted topped with lemon butter sauce; chimichurri topped with fresh lime juice, olive oil and fresh herbs or creole made with traditional bell pepper, onion and tomato sauce.

Bahama Breeze offers Entrée Salads, infused with island flavors and filled with plenty of fresh ingredients. The Grilled Chicken or Shrimp and Tropical Fruit on Mixed Greens includes fresh pineapple, red grapes, strawberries, and mandarin oranges, with goat cheese crumbles, candied almonds and drizzled with vinaigrette.

Rice bowls are great option for those who want to eat light including the Mahi & Shrimp with Lemongrass Sauce made with sautéed Mahi Mahi, shrimp, Shiitake mushrooms, bok choy, sugar snap peas, edamame and bell peppers in a zesty coconut lemongrass sauce and served over rice.

For a decadent dessert, try the Warm Chocolate Pineapple Upside-Down Cake, a warm rich chocolate cake with a molten center topped with caramelized pineapple served with raspberry sauce and fresh island fruit.

Caribbean food plays a central role in family life and traditions in the islands. The cuisine of the Caribbean represents the plentiful bounty of the islands' lush tropical vegetation, combined with the diverse groups of people that have lived there, including the original Carib and Arawak Indians, followed by the Spanish, British, French and Dutch settlers as well as Africans, who have had a profound influence on the food and cultural traditions of the islands. Later followed Indian and Chinese settlers and travelers from the United States.

Great cocktails are part of the tropics including Dark 'n Stormy, the combination of Gosling's Black Seal Rum and a refreshing zip of ginger beer? As Bahama Breeze “warns:” if served in a triangular glass, do not drink!

Happy hour is Monday to Friday 4 to 6 p.m. and Sunday through Thursday 9 p.m. to close with half-price appetizers and drink specials. Every Saturday evening is the Summer Beach Bash with live music and drinks from 4 to 10:30 pm featuring the music of Caribbean Soul and Kevin Farre.
