National Grilled Cheese Month is still upon us. There are a million ways to celebrate, and eat, the grilled cheese sandwich. My favorite by far, is a deliciously grilled sandwich topped with avocado and bacon.
Ingredients are key when you have a simple meal such as this. The bacon must be mouthwatering, the spinach crisp and tender, the avocado ripened to perfection, the bread chewy, and the cheese melted over everything.
- 1 tbs butter
- 1 french loaf, cut in half
- 1 avocado, mashed
- cheddar cheese, sliced
- 4 slices of thick cut bacon
- 2 handfuls of spinach
- 1 tbs mayonnaise
Preheat your oven to 350 degrees F. Slice open the loaves, and smear mayonnaise on both sides. Then lay your cheese on the open bread. Bake until the cheese starts to melt.
Remove from oven and layer on the mashed avocado, 2 slices of bacon per sandwich, and 1 handful of fresh spinach each. Close the sandwiches and butter the top and bottom of the bread.
Place on a frying skillet, and cook each side until brown.
Remove and eat immediately. Talk about a delicious way to celebrate National Grilled Cheese Month!
