Back on The Santa Fe Chocolate Trail: Todos Santos Chocolates and Confections

Foil-covered muertos at Todo Santos Chocolates

This is Part 2 of a four part series. View Part 1 and Part 3

Todos Santos Chocolates and Confections, tucked into a corner of Santa Fe's historic Sena Plaza building on East Palace Avenue, has a truly magical feel. Mexican cut-paper and a plethora of goodies hang from the ceiling.

Owner Hayward Simoneaux’s got into chocolate via a collection chocolate molds he had amassed. This led  to a course in fabricating molds and the decision that he wanted to use them. He opened the shop ten years ago. He is a self-taught chocolatier; he uses skills he used as a framer to coat his house-made Santos and milagros in edible gold and silver leaf. This is his signature line. He also makes toffees, a signature chocolate bar, truffles and nut clusters in-house. The shop also offers chocolates from France, Italy, Belgium and the wares of small artisanal confectioners from various parts of the United States.

If you can’t get to Santa Fe and want to try the chocolates, Todos Santos does mail order the old-fashioned way- you call them. Official hours are 10-6, call before you go, they may not be there, remember they are inspired by Mexico, the land of mañana.

We can thank Mexico for so many foods, but none make me so grateful as chocolate. Some of the interesting things they are doing now with non-sweet chocolate have a sense of history. It didn't start out as a dessert, so it is coming full circle. Delicious.
