Thursday night can be a tough night of the week to cook dinner as it is toward the end of the week and you and your family are usually tired and extremely busy. So why not make this paleo Avocado Chicken Salad recipe that can be made in under 30 minutes and only requires a few simple items.
1 Pkg boneless, skinless chicken breasts (2 or 3)
1 avocado
1/4 of an onion, chopped
juice of 1/2 a lime
2 Tbsp cilantro (or sub basil if you prefer)
some salt and pepper, to taste
Cook chicken breast for five to seven until done, let cool, and then shred. Add all of the other ingredients and mix. Let stand in bowl for five to ten minutes than serve. This salad is best cold and over a mix of spring greens or fresh cut carrots or tomatoes.
