Autumn veggies are great ingredients for green drinks

Today is the first day of Autumn, and we are already seeing cooler temperatures in the Charlotte area. It's time to start transitioning your kitchen garden to the hearty vegetables of Fall.

One of my friends has been commenting for a couple of year about how much better she feels when she starts her day with her green juice recipe. After searching through several recipes on the internet, I found that most had ingredients that were pretty simple, and most can be grown in your garden in Autumn or found at local farmers markets.

While many of these recipes were written for juice machines to remove pulp from their drinks, I prefer to make mine in a blender to keep the fiber in the drink. However, this same recipe can be used in a juicer to make a smoother drink with less fiber.

Place the following ingredients into a blender:

  • 1 cup of spinach leaves, washed (Kale can be substituted or added to the spinach)
  • 2 red apple - peeled, cored and diced
  • 1/2 cup orange juice
  • a splash of lemon juice
  • 1 small carrot, peel and diced

Blend thoroughly.

If you can't face the thought of adding a thick green drink to your morning routine, consider taking the using the same ingredients (except for the orange juice) and making a spinach salad with apples and carrots on top. Add a quick splash of lemon juice to the salad as a substitute for a salad dressing. You'll add the same nutrients to your breakfast.
